One Pot Chicken Noodle Soup

I eat like a horse when I’m sick, it’s gross. I don’t know who told me but I have it in my head that if I’m sick I need to eat a lot. I definitely feel better after eating when i’m sick, but who knows if it’s actually good for me.

A few weeks ago I was feeling pretty sick, and with a few days off work I managed to finish this months book club –sob– and get caught up on everything on the internet. I decided that I should get up and make myself feel better by cooking a hearty meal, and what’s better than chicken so when your sick? Chicken noodle soup.

I slowly made my way to the kitchen, thinking that while we might not have chicken I had some dumplings in the freezer that would suffice my sick food craving.

One Pot Chicken Noodle Soup

One Pot Chicken Noodle Soup

// Ingredients
Spaghetti – a small handful, broken into small pieces
2 Cloves Garlic – fresh is best, diced
1/2 Tomato diced
Handful of fresh Coriander or Sage
1 L Chicken Stock
1 C Spinach
2 tsp Ginger
1 tbsp Worcestershire sauce 
1 tbsp Sirachaca sauce or to taste (optional)
Salt and pepper
Dumplings or Chicken, as many/much as you desire

// Method
Make up chicken stock, if pre-made stock, heat up. Add Worcestershire sauce and Siracusa sauce, mix until combined. Add spinach water.

Place all ingredients in the pot apart from dumplings or chicken, place on a medium heat and simmer covered for 7-10 minutes. Add dumplings / chicken. Continue to simmer for 2-3 minutes until chicken is sealed.

Continue to simmer uncovered for a further 10 minutes or until chicken is cooked through, remember to taste and add salt and pepper as you please.

Enjoy with a rom-com. Well, at least that’s what I did!

  1. Starve a fever, feed a cold.
    That’s where the logic comes from, it’s a very old saying and it works.
    While I personally don’t like chicken noodle soup, apparently there is also a science behind why people eat it when they’re sick. Something to do with the protein and vitamins being the best for your immune system. I do like noodles though. An unhealthy amount if I’m honest.
