Indian Fried Rice with Chicken and Broccoli

Want a meal that is packed with veges but you wouldn’t even know it? Definitely try this! It’s a great ‘fakeaway’ (fake takeaway) meal, my husband loves it and I think kids would too, and they probably won’t notice all of the different kinds of vegetables.

Indian Fried Rice with Chicken and Broccoli

This makes enough for four people.

What you’ll need

  • 1T olive or sesame oil
  • 500 g Chicken mince
  • 1 red onion, diced
  • 1T crushed garlic
  • 2t ginger, finely grated
  • 1T any Indian curry paste (I used Tikka Masala)
  • 1 carrot, finely diced
  • 1 courgette, finely diced
  • 1 head of Broccoli (about 300 – 350g)
  • 1C frozen peas and corn
  • 2C rice (any kind is fine) *
  • 2t lime juice
  • 1T soy sauce
  • 1/2 cup(s) fresh coriander, chopped
  • Small handful of raw cashews, chopped

* For the rice, I usually use an Uncle Ben’s packet and microwave it.

Method

  1. Heat a large sized pan or wok over high heat. Add oil and heat, add mince (do in two batches is best) until cooked through and golden. Set aside.
  2. Reheat your pan (medium heat) and cook the onion for 1-2 minutes, add ginger, garlic and paste and stir until fragrant. Add carrot, courgette, broccoli, peas and corn and ¼ cup (60ml) of water and stir-fry until vegetables are tender (3-5mins).
  3. Return chicken to the pan and add cooked rice and stir.
  4. Add lime juice, soy sauce and 1/4 C of the coriander. Stir-fry for 2 minutes until heated through.
  5. Serve sprinkled with coriander and cashews.
  6. Enjoy!

If you want a bit of decadence before serving get 4 teaspoons of your paste and 1/2 cup of greek yogurt (add more to suit your taste) and mix together for a complementary sauce.

This recipe is inspired by this Weight Watchers recipe. This is a 4sp recipe, however the complementary sauce is 1sp per serve.
