Wanganui Slice

Wanganui Slice - Caramel No Bacake Slice

I love to bake and more-so love to cook. I got the Gran’s Sweet Pantry cookbook for my birthday from my bestie, Kate, and immediately bookmarked some great recipes to try out.

The first recipe that caught my eye was this Wanganui Slice. Wanganui is the small town where I spent a chunk of my childhood, i’ll always have a soft spot for it. So when this recipe was named after Wanganui, I knew I was destined to make it. 

This Wanganui slice is a delicious, sweet and crunchy no-bake slice, easy to make and perfect for afternoon tea.

Wanganui Slice

// What You’ll Need

CRUST

  • 240 g Kremelta
  • 4 tbsp cocoa
  • 1 C icing sugar
  • 1 C desiccated coconut
  • 200 g cornflakes
  • 1/4 tsp salt

FILLING

  • 50 g butter
  • 1/2 x 365 g tin sweetened condensed milk
  • 1/2 tsp vanilla essence
  • 2 tbsp golden syrup
  • 1/2 C brown sugar
  • 1/2 C almond slices, toasted. Optional

// Method

Grease and line a slice tin. Set aside.

Melt the Kremelta. Add cocoa, icing sugar, coconut, cornflakes and salt.  Mix well to combine. Divide the mixture into two and add half into the slice tin and press down. Set aside.

On to the filling: Melt butter, then add condensed milk, vanilla, golden syrup and brown sugar.  Boil gently for 5 minutes, stirring continually. Pour mixture over the base, then spread the other half of the crust mixture over the top. If you are using almonds sprinkle them over the top.

Pop in the fridge to set overnight, or if you can’t wait, at least a few hours. Cut into rectangles or squares as desired. Enjoy!

        Our cat in the UK was a savoury cat so he used to eat raw bread dough! But he also had cupcake frosting, butter, cream, milk….he was so spoilt! Eddie is going to be the same. But he’s cute so it’s all good 😛 xxx

    1. Will have to look into the ginger crunch! Yum! I’ve seriously bookmarked about 15 recipes I want to try. I think the next one will be her savoury muffins. Yummm!

  2. I was sure I commented on this but it mustn’t have worked! The slice looks delicious, and I grew up in Wanganui as well, only moved up here just under a year ago!       Also – very cool that you are from Wanganui! I was down there for about five years, but it feels so much longer. I really loved it down there, we moved up just before I started high school!
