Diabetic Apple Crumble Recipe

A tart taste and simply sweet filling with a slightly crunchy crumble that diabetics will love.

I tried this recipe out for Mother’s Day this year and was a hit. Easy to prepare in advance, and I just popped the crumble on and in the oven when we arrived at mums for dinner. Easy.

I used the new Equal Naturals Sugar Free Crystals, which is the closest type of sugar free sweetener to actual sugar I’ve used. A lot of the sweeteners out there are powders, where as the crystals there feel, look and crunch like real sugar. Therefore adding it to any type of moisture it keeps its texture, and firmness, just like real sugar. I really did put it to the test with making a crumble, as your need the sugary texture to come through for the ultimate crunchy crumble.

Diabetic Friendly Apple Crumble

Filling
2 Stalks of Rhubarb
1/3 C Naturals Sugar Free Crystals
1 1/4 C Water
2 tbs Lemon Juice
3 Apples, sliced / squared, skins on
Cinnamon to taste, I used 1 tbsp

Crumble
35 g Butter
25 g Naturals Sugar Free Crystals
10 g Cornflakes / Oats
35 g Plain Flour / Wholemeal Flour

  1. Simmer rhubarb, sugar and 1/4 C water for 5 minutes on a medium temperature.
  2. Reduce to low temperature and add lemon juice.
  3. Reduce until rhubarb is mushy. Add cinnamon, and the last of the water (1 cup) add apple slices and increase temperature to a medium heat.
  4. Bring to boil and simmer for 5 minutes, until apples are soft.
    Keep the apples moving to ensure all are cooked.
  5. Create crumble: Fastest/easiest way is to pop a bowl on a electric weigher and then add in the ingredients that way. Mix all together with your fingers until it resembles breadcrumbs. Try to keep your hands cool otherwise the butter with turn into one big lump, if this happens add more flour.
  6. Add apple mixture into your desired oven proof dish, top with an even layer of crumble. Bake at 180C for 20minutes until filling is boiling and crumble is lightly browned.

  1. Yuuuuum, this looks so good!! I would have to leave the rhubarb out though, that stuff grosses me out. But man, I can’t resist apple crumble.

  3. I love this recipe. It looks so tasty.
    The only problem I have is the last line “serve with a dollop of cream” because my idea of a dollop of cream is a 250ml bottle of the stuff. Go big or go home you know!
