
Quesadillas are far from attractive. So you will have to excuse how this recipe looks.
While the look of a meal can sometimes hinder how it tastes, this Chicken Quesadilla recipe is full of flavour and is so easy to make – it’s perfect for weeknights.
With a few simple ingredients, a hot plate (or fry pan) you have an easy, tasty and healthy dinner.

Serves 2 (Makes 4 small quesadillas)
1/2 Tin Refried Beans
2 Tbs of Sriracha Sauce (optional)
1 1/2 C Shredded Chicken (we used a ready to eat one from the supermarket)
1/2 C Grated Cheese, or to taste
8 Small Tortillas
Tomato Salsa
2 C Lettuce
Salt and Pepper
This is one of the easiest meals you can make – perfect for a weeknight when even a “30 minute meal” won’t cut it, and you want something a little different!

I make quesadillas when we need something quick. I don’t usually use beans, but avocados are always welcome 🙂
Yum! Yes avocados are one of my favourite things when cooking Mexican! The beans have a similar consistency to Avocados when mashed. I can’t believe I didn’t grab a avo to have with this dish – chicken and avocado go together so well!

Oh vege quesadillas are so easy Nishu! Just opt out the chicken and have just beans or instead of chicken you could have Roasted Kumara / Kidney Beans / Halloumi (omg) – endless opportunities!

Yum, quesadillas are the best! I need to find some gluten free tortillas (do they exist?) and make these, it’s been too long!
