This recipe is delicious, oh yes! Adapted from I Breathe Im Hungry website, comes a low carb and gluten free dinner, or hearty lunch for you to gobble up.
Cuban Hot Pot – Low Carb & Gluten Free
Ingredients
- 1 steak boneless chuck beef (or similar cut)
- 1 red chilli, chopped finely
- 1 cup diced tomatoes
- 1 cup water or beef/chicken/vege stock
- 2 Tbsp dried onion flakes
- 1 tsp garlic powder
- 1/2 cup red and yellow peppers chopped
- 1 tsp salt
- 2 Tbsp ground cumin
- 1 Tbsp ground coriander *
- 1 tsp dried oregano
- 1 Tbsp chilli powder
- 1/2 tsp black pepper
- 2 Tbsp apple cider vinegar (optional)
* I love to leave out the ground coriander and top with fresh coriander when serving.
Method
- Generously season the steak with salt and pepper.
- Sear in a hot pan until browned on all sides.
- Place the meat in the bottom of your slow cooker.
- Add your chillis, and tomatoes to the pan you seared the meat in. Deglaze and bring to a boil. Pour over the meat in the crock pot.
- Add the onion flakes, garlic, peppers, salt, cumin, coriander, oregano, chili powder, black pepper, and apple cider vinegar and stir.
- Cook for 4hrs on high, or 6hrs on low (or until the meat is tender). I like to stir it every so often too
- Shred the meat (optional as is should be falling apart anyway) and serve with your choice of toppings – guacamole and fresh lime is to die for!

Brown that meat!

I add the stock straight into the tomato tin to get the rest of the tomato.

Stir and it’s ready to go!
Notes
– I love this to have a lot of liquid, so its more of a thick soup, but if you would rather it be a thicker consistency, simply add less water/stock.
– This recipe also works well with 4-6 chicken thighs, when I first tried this recipe I did it with these instead of steak. Just as tasty.
– Instead of plain hot water you can add a beef stock cube to have more flavour.

Yum! This looks so good. I think it’s about time I invested in a slow cooker!
It really really is good – haha. Slow cookers are actually pretty reasonable. We got a little one (I think ours is a Zip, 4.5 L) as there is only two of us, but that is easily big enough to put a big meal for 6+ people in as well!
Also the convenience with slow cookers are great. I spent less than 20 minutes preparing this dish and popped in on high for 4 hours and BOOM deliciousness.
I love the slow cooker so much! You can throw pretty much anything in there and it tastes awesome and doesn’t take long to make!!
You are so right! I did that once with some beef, ended up with a really nice BBQy shredded beef for burgers, cannot for the life of me remember what went in there though! haha
